Keep pressing the dollar sign $ for a second or two, a pop-up will display showing other popular currency symbols – Euro, Yen, Pound

When you keep pressing a key in the iPhone keyboard, for some of the keys, it will display a pop-up with additional characters to choose.
For example try pressing period key for a second or two and you will get a pop-up displaying period as well as ellipsis to choose as shown below
